Blaue Gans is an elegant little restaurant at the Arte Hotel, serving stylized Austrian food.

The dishes are carefully created, blending traditional Austrian elements with chic presentation. The food is delicious and crafted with care. The ingredients used are really fresh, which is telling in the wonderful flavoring of all the dishes we sampled.

 

This is where I first sampled the famous Salzburger Nockerl. This is a traditional Austrian baked pudding, made with a light mixture of stiff egg whites and berries.

    Wiener Schnitzel, an invention actually comes from Mailand=Milan, which before WW I, was part of Austria. German dialect is Süd-Tiroler in north Italy’s Alpine mountain area (South-Tirolean).
    Special laws protect the South Tirolean s, just like the German speaking people in eastern countries like Poland, Czech republic, Serbia’s Siebenbürgen etc etc. Polish teachers go to help harvest on farms in Germany in Summer school holidays, to earn more than all year long teaching at home, is no secret in the eastern countries. Silesians who go to visit in these countries are invited back because they took their trade skills with them as they were pushed out in 47. This comes from going there to see and hear what Polish and Czech people told me and other Silesian visitors, Summer of 89 Saw the most unhappy people there, and had lots of letters sent asking for help to get out of there? What I saw is just the tip of the iceberg. Though I have seen worth conditions in Mali, Ethiopia, Ivory coast, and Nigeria, Eastern Europe did not surprise me. had  to show how to make scramble eggs in Czech restaurants?? Jews in the Mideast, were in much better shape than anywhere else..
