Must try: Chow Fun with Braised Pork Shank, Long Island Fluke

Dale Talde is a brilliant veteran chef having worked in the kitchens of Vong, Buddakan and Morimotos.

This former Top Chef contestant has now branched out to open his own take on hipster Asian fusion cuisine. His eponymous food spot in Park Slope churns out great combinations of small plated Asian accented cuisine on dreadfully kitschy plates!

Foodwise – most of the combinations work beautifully. My favorites dishes were the fluke fillet with black beans and brown butter which was really delicate. I thought the chow fun noodles was just stunning with both delicacy and crunch married together in a perfect union. I didn’t care much for the brussel sprouts that’s night, which was drowned in overpowering flavors and way too much fat.

The service at Talde is friendly but there can be long wait between plates. It is really refreshing to see Dale casually wandering around the restaurant chatting with patrons.

Talde, is a definite must visit spot if you are in Park Slope
