I recently attended a preview media event with Sachiko from Cutie Patroller at The Ramen Lab – which is one of the most anticipated new ramen spots in New York City.

This new venture by Sun Noodles is headed up by Chef Shigetoshi “Jack” Nakamura and partner Kenshiro Uki who are both passionate ramen artisans.

We spent an absolute divine hour feasting on some really tasty eats. We began with a delicate Hanetsuki Gyoza, which is thin-skinned gyoza pan-fried together. It was served with a yuzu-soy dipping sauce and was absolutely delicious – some of the best I have tried.

We also tasted two very different bowls of ramen. The first one was a “Tori Gara Shoyu Ramen” served with Charsui pork, bamboo shoots, fish cake, spinach and scallions – this was my favorite broth of the day.

We also tried a really flavorful “Vegetarian Spicy Miso Ramen” which had very robust and lively flavors which was a wonderful contratst to the previous bowl.

Aside from serving seriously slurp-a-licious bowls, the Ramen Lab aims to showcase the craft of authentic Japanese Ramen to a larger audience of ramen enthusiasts. They plan to offer tastings sessions and seminars that focus on styles of ramen “not as well known in New York.”

The Ramen Lab is going to be all the rage once it opens up in early Jan – I am just so glad I got a sneak peek before the lines start wrapping around the block.
